To make the Clementine Syrup (produces 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g fine sugar

To make the Drink (makes 850ml, serving 10)

Instructions

For the Citrus Syrup: Place all the components inside a saucepan, heat until it reaches a light boil, stirring until the sugar dissolves. Next, take off the stove allowing it to cool entirely. Transfer to a sterilised bottle, seal and refrigerate it chilled, it will last for around four weeks.

To make Batch Mix: Pour all the liquids into one sizeable container, allow it to infuse for an hour, then pass it through , ideally through a fine cloth, so it's fully clarified.

When ready to serve: Add 85ml from the cocktail base into a mixing glass filled with ice, and agitate lightly for about 60 seconds until cold. Strain to a frosted cocktail glass or similar, garnish with the cranberries and complete it using a light spray of mandarin oil over the drink.
